4 KEY STEPS
ORIGINS
A perfect balance between the terroirs of Barbados and Trinidad with a touch of Jamaica.
AGING
The selected rums primarily age for up to 10 years in American white oak casks. This ageing takes place in their terroirs of origin, taking advantage of the heat and specific hygrometry of the Caribbean Islands which give a unique oxidation to the future rum, accelerating maturity and concentrating flavors.
BLENDING
SAISON Rum XO is the result of the selection and blending of remarkable batches of rums aged in their lands of origin: Jamaica, Barbados and Trinidad. Each batch is then matured in the casks originally used for the Distillerie Tessendier cognacs. Depending on their age, their size and the cognacs previously contained, they will give each batch a particular typicity. This double maturation encourages the marriage of flavours and enhances the subtlety of this exceptional rum, which is at least 10 years of age.
FINISHING
This exceptional maturing process provides the Cellar Master with a wide variety of aromatic profiles, which he can then assemble to produce a generous rum, both complex and rich in aromas.
The powerful and generous nose opens with vanilla flavours that are enhanced by toasted, cedar notes, with a hint of cigar box. The palate is ample, offering light woody notes with flavours of flambéed banana. Good lenght.
